The original Mason-Dixon line was only between Pennsylvania and Maryland. There are different takes on it today but the major one is it was the dividing line between the Yankees and the Confederate states.

"The South" refers to the southeast of the USA, i.e. the Confederate states, or "Dixie".
The eleven Confederate states were:

Alabama

Arkansas

Florida

Georgia

Louisiana

Mississippi

North Carolina

South Carolina

Tennessee

Texas

Virginia
