That does sound pretty bad, but here's the version I have, which makes it clear that the "fighting God" is about being a criminal. This is especially clear if you see the verse in the context of the previous one:
[5:32] Because of this, we decreed for the Children of Israel that anyone who murders any person who had not committed murder or horrendous crimes, it shall be as if he murdered all the people. And anyone who spares a life, it shall be as if he spared the lives of all the people. Our messengers went to them with clear proofs and revelations, but most of them, after all this, are still transgressing.
[5:33] The just retribution for those who fight GOD and His messenger, and commit horrendous crimes, is to be killed, or crucified, or to have their hands and feet cut off on alternate sides, or to be banished from the land. This is to humiliate them in this life, then they suffer a far worse retribution in the Hereafter.

Note the presence of the adjective "horrendous". What is being described in this verse is typical punishment for the 7th century version of serial rapists and the like. Typical Old Testament stuff.

It was quite recently that England was hanging children for stealing bread. (In other words, "been there, done that".) The problem with fundamentalism is that there are always conflicting passages elsewhere.

This is horribly quoted out of context, as would be indicated by the fact that the passage starts with a conjunction, LOL!!! Here's the full quote in context, and probably better translated. Note that my quote starts just one verse earlier, but it is a verse that changes the meanings of the verses you gave. Either you're a Muslim hater, you like to lie about other people's holy literature, or you picked up these quotes from someone who is and didn't check them out for yourself. Which is it?
[9:4] If the idol worshipers sign a peace treaty with you, and do not violate it, nor band together with others against you, you shall fulfill your treaty with them until the expiration date. GOD loves the righteous.
[9:5] Once the Sacred Months are past, (and they refuse to make peace) you may kill the idol worshipers when you encounter them, punish them, and resist every move they make. If they repent and observe the Contact Prayers (Salat) and give the obligatory charity (Zakat), you shall let them go. GOD is Forgiver, Most Merciful.
[9:6] If one of the idol worshipers sought safe passage with you, you shall grant him safe passage, so that he can hear the word of GOD, then send him back to his place of security. That is because they are people who do not know.

How can you honestly quote a passage that starts with "and"? Are you stupid? Of course that is taken out of context, does anyone you know start their sentences with "and" without having said something previously? Here's the quote in context:

[2:191] You may kill those who wage war against you, and you may evict them whence they evicted you. Oppression is worse than murder. Do not fight them at the Sacred Masjid, unless they attack you therein. If they attack you, you may kill them. This is the just retribution for those disbelievers.
