thanks for pointing out the dangers of ozone in personal quarters/usage

now, I do have some blueprints/plans/directions for a home made still in case anyone is interested .....

and, of course, most all on the tread are already aware of the impediment to rational thought that 'white lightin' or 'moon' can cause .....

I've even been told that the results of up close and personal contact with Ethanol has caused SOME of the thread participants *(while in Vegas) to have exhibited characteristics not revealed on SI .....

Alcoholic fermentation is not performed by enzymes, but rather by yeasts. Yeasts are not bacteria but fungi. Yeasts are found in nature everywhere, particularly in the autumn when fruits ripen and their spores spread in large numbers in the air. These carry out a simple chemical reaction in sugar/water solutions according to the following formula:

C6H12O6 -->2 (C2H5OH) + 2 (CO2)

The yeast fungi splits a Glucose molecule and produces two ethanol molecules (alcohol) and two carbon dioxide molecules per ring and energy in the form of heat. Additionally, fruity flavor materials (esters) develop, which provide a large taste variety to the whisky. The yeast fungi cannot act on pure starch, which remains untouched by the fungi.
