I used to buy a fresh turkey around Christmas and freeze the breast. We ate the rest for our meal. Then about April I'd smoke the breast and we'd have turkey sandwiches when we went to dog trials.

I use about 1/4 cup sugar with that and also some spices - about a tablespoon of poultry spices helps...

Then I drain it and cook it at around 250 for 6 - 10 hours depending on size. I have also smoked them on apple wood and they are great!

We like to use orange juice..to make turkey sweet..
