Re : basting a turkey with butter (in addition to the juice in the roasting pan) -- I used to use as much as a whole stick of butter (1/4 pound) when basting a turkey. I had this funny feeling that all I was accomplishing was : increasing the amount of stuff we discarded from the (next morning) chilled bowl of turkey juice (gravy). One year, I tried no butter at all. None of us could tell any difference, so ... it has been "no butter" every year since then. Jon.
