Why would any business want to cut itself off from 90% of its potential market? Creating platform-portable software is a pretty well established science at this point. Is the "purist" Mac market (those who won't buy a product unless it is available exclusively on MacOS) that large these days?

I think it was more likely a decision by Bungie management. Mac gaming is a small market, Bungie wanted to focus on the future of gaming, XBOX.

Edit, I see that you've mentioned that this decision was made after MSFT purchased them. Possibly you are correct that this was MSFT motivated, but I wouldn't necessarily jump to that conclusion.
