One difference with flash is that the pinouts differ, and the commands sent to the chip to write are different for different manufacturers, unlike RAM. If, say Micron memory is too expensive, you can buy Samsung and just drop it in. With flash, you have to re-spin the board. True, by taking care in laying out the board, you can get some degree of inter-changeability, but you also might give up functionality.
