poached salmon? What a waste of good salmon. I hope you're inflicting this only on a farm raised salmon or an Atlantic salmon, not on one of our good wild Pacific northwest salmon. If you use farm raised salmon, of course poaching is fine; no way of cooking those things can make them tasty, so might as well poach them. If you're wasting one of our good native salmon, though, you deserve to be poached yourself for subjecting it to such indignity. I would wish you a merry Christmas, but I guess that would involve you in the religious aspects of this season, which would bruise your sensitivities. And I would sure hate to do that. So I won't.
