NEXT is a great example how well CAKE concept works. As for seafood, it will fail badly because their seafood is un edible. A steak and onion rings are pretty fail proof. Even at your house-g- Seafood is not a good basis for a chain, I would more aptly do a raw bar or Sushi chain, like a japenese steak and sushi chain and call it Tokyo Joe's-g- Doing crappy seafood as a concept will fail IMHO.

Probably trying to rip the "Joe's Crab Shack" idea from Landry's...actually the food their wasn't terrible (and I'm kinda picky about seafood, being from New Orleans and all...). Becoming kind of a hot sector, with Pappadeaux's in the same niche. That's one problem with restaurants...seems like EVERYTHING has been tried, so you have to have good timing, a well-thought out concept and perfect execution to pull it off.

JRI, OSSI has 3 founders - two worked at Bennigan's and all three worked at Steak & Ale. Mike
