The Outback fish concept is called Bonefish Grill. They are very excited about it; think it could be 250 units in time. Returns (on capital) look like they could be as high as Outback. Also note that Outback owns Carrabba's, which is bad expensive Italian but has about 100 units and is doing very well.

Tell that to the guys are Darden (DRI), who own/operate Red Lobster. Crappy seafood and crappy Italian (Olive Garden) is the basis for a $4 billion equity market cap business that generates $400mm a year in after-tax cash from operations.
