Hi Rose, Happy New Year to you too. It sounds like you had a wonderful time in Mexico. I miss the beautiful weather now that I sit here contemplating the snow storm we got today. I noticed that living in the desert made my body turn to desert too. My skin was so dried out, and I even became dehydrated I think because I got so very ill, Clappy had to force me to drink more water and then I felt better the next day instantly. Your recipe sounds very good and easy to make to boot. My brother in law had a good one for shrimp that I suspect would work well with prawns as well. You clean the shrimp and place in a pan with butter, garlic, seasonings of your choice a diced up fresh tomato and saute until shrimp is cooked then sprinkle some feta cheese on top and cook further until cheese gets melty and serve with cooked rice.
