<do you ever smoke your catch?> i tried once. after finally finding papers big enough the darn thing kept going out. <g> yes i have a large smoker. i have already cut and pasted your recipe to my recipe folder. i have been using the same brine recipe for almost 20 years. everyone i give smoked fish to raves about it. at a party for my wife, her grandmother announced she didn't like smoked fish but would try it. i think she ate about a pound of it! but, after that many years i'm ready for a change so will try this one. thanks! i am just recovering from a nasty 3-day flu. when i recover and get caught up with work, i will post an excellent salad recipe for you. i tried it tonight for the 1st time and thought it was great. then again after 2 1/2 days of pepto and sprite anything might taste good. :o) thanks again! p2
