Clearly mandarin. Catonese is a dying language (politically/economically speaking), and the importance of Hong Kong continues to diminish on the world stage.

What type of Chinese should Americans learn--

I find the one answer you received to be interesting. I'd like to suggest what a Missionary to China told me. I'd appreciate any opinions, or criticism from anyone who has lived there.
I was told that Chinese people speak at least two dialects, and many speak more. There is a language called "Chinese". It is a very cold analytical language used for business dealings and the such. Every person in China speaks it. There is another language called Hakka. If you want to be personal, and speak to a China man's heart...you should speak Hakka. And of course each province has it's dialect. Perhaps this person was speaking of Taiwan only? I didn't think so?
