Well there were always class or caste cultures embedded within the overall societal culture in any somewhat complex society.

This doesn't have much relevance to my point I guess - the Maya showed soem sophistication in some areas and plenty of barbarism in others. So did the Spanish, Aztecs etc. Quite how to compare them is difficult... however some cultures are probably better than others overall like some languages probably really are harder while others are hard to compare.

Standard definitions of ethnicity include a bunch of markers like language, religion, country/region of origin, as well as racial averages, but is most clearly defined by self-identification. The former markers just serve to indicate that a social class/caste etc. is not an ethnicity. Otherwise they may look very similar in behavior.
