The casino's objection is not based on counting being illegal. They use the "we're a private club and we can exclude anyone for anything" card to discriminate against counting. The fact is, it takes a disciplined, very well-bankrolled counter to do any sort of significant damage to their bottom lines. And the fact that the game can be beat at all provides excellent advertisement. I'd say less than 5% of players in Vegas count (probably a higher proportion in the single deck games downtown), and probably less than 1-2% do it in a way that should be profitable. Hell, probably less than 10% of players even play correct, to-the-T basic strategy.
