There is a big assymetry in available quotes. Israel opened its archives, and historians examined them. If they felt like responsibly reassessing the historical picture, they could do that. If they felt like taking some quote from the middle of a council meeting and using it as a basis for a stunning revision of history, they could do that too, and some did.

However, the Arab governments' archives remain shut. So all we know about their intentions come from their public pronouncements and deeds. We do know that where ever the Arabs held the land, not one Jew was allowed to remain, even the anti-Zionist Orthodox who accepted Arab rule.
