i found this in this morning's paper - it
uses Yves brand Veggie Ground Round.

"Vegetarian dish fools chili aficianadoes"

Black Bean Soy Chili


1 tbls vegetable oil
1 medium onion chopped
1/4 cup chopped celery
2 cloves garlic chopped fine
2 cans stewed tomatoes
1 bay leaf
1 tbls chili powder
1/4 tsp dried oregano leaves, crushed
1/4 salt
1/4 chipotle or regular hot pepper sauce
1 can black beans, rinsed and drained
1/3 (340 g) package Veggie Ground Round,
crumbled (about 3/4 cup)

In a large pot, heat oil over medium-high heat. add onion, celery and garlic; saute for 3 minutes or until vegetables are tender.

Add stewed tomatoes, bay leaf, chili power, oregano, salt and chipotle pepper sauce; bring to a boil.

cover and reduce heat to medium-low; simmer for 10 minutes, stirring occasionally.

stir in beans and veggie ground round; cover and cook for 3 minutes or until heated through. remove bay leaf and discard. add salt and pepper to taste. makes 4 servings.

approx. nutritional analysis for each serving of soy chili: 228 calories, 15.4g protein, 4.3 g fat, 35.7 g carbohydrate. excellent source of vitamins B12, C, thiamin, niacin and folate. excellent source of iron, magnesium and zinc. very high in fibre.
