I would agree with you. I think it's a descriptive term, and an accurate one as descriptive terms go. Much like saying the US is an English speaking nation, even though not everyone who lives here speaks English.

In almost any other context, using such general descriptive language is unremarkable. It's only in the religious context that some people get their noses bent out joint.

The phrase is often used with hostility, that's why it's met with hostility. There are lots of words that provoke hostility. Add "Christian nation" to the list. Use it if you want, but don't play innocent if you get a reaction. I recognize now that "invisible friend" is on the list. You can recognize "Christian nation."
