The greens yield calcium. They are best when boiled wityh a bit of (fried) bacon & contain finely diced turnip root & onion diced hot pepper. Serve is cornmeal fried catfish & black eyed peas or red beans & cornbread.

In some areas where there is a large amount of iodine in the soil the turnip root becomes a slight source of iodine.

As far as potatoes loving the yukon, let me inform you. Everything grows well in the yukon and to gigantic size. The reason is the short season is more than offset by the direct rays of the sun on the mountains and the very long days. 200 pound cabbages maturing in 3 weeks are not uncommon.

The common yaller potater, called the yukon gold, was grown first in ontario. It has a yellow colour which is considered a commercial drawback, it was grown to be disease resistant.

Turnips taste GREAT raw, AND can be substituted in potato refining I suspect...ever resourceful, the miner, eh?
