Maybe we should rename it. :-)

I knew a woman from Louisiana. She tried (unsuccessfully) to introduce me to (YUCK!) oyster stew. She claimed it was a favorite dish down there.

Other than that, I plead, ignorance.

You hate some oil, add flour and brown it to make a roux. Then you add the trinity, onions, celery and bell pepper that's a must. Then you add green onions, garlic, cayene pepper and any other spices you want. Maybe some slimy okra. If it's a fish dish you add fish and fish stock. Same with beef and chicken and crawdads and oysters.
