I've had fresh fish. Used to go to Canada 4 weeks a year. Shore lunches. Catch 'em and fry 'em a half an hour later. Smoked fish? I went up to Manitowoc, Wisconsin when the first salmon came back in. Brought home 80 pounds of filets. Bought a hog and killed and dressed it. Got an old time brining solution from the library and then an old cold smoker. Bacon and cold smoked fish to die for. The fish was raw but kept for 3 months on the counter. Rich so I had to get used to eating it but it was good.
