That was years ago. We used a salt, brown sugar and pickle brine. Never let the fish or bacon get over 60 degrees. Borrowed the old time cold smoker. Used chips from a wild apple tree cut down with an ax.

The smoker had a fire box at one end and the chamber was opened at the other end to a pipe that ran back across to the smoking chamber.
