The bigger question is why Penni insists on chicken salad sandwiches all the time It's because the alternative is salmon and I dislike salmon, which tells you that I an not elegant. People with class always order salmon. When it is served at dinner parties and barbeques, it is always by the same people who put squash rings around little packets of asparagus and talk to their desserts in French and tell you from what vineyard in France they ordered the wine. The chicken salad sandwich is reliable. Like your turkey mummy, omnipresent and immutable. And it comes with really good new potatoes with mushrooms and sundried tomatoes in a vinaigrette. FYO, sundried tomatoes are also a sign of class. I bought some but didn't know what to do with them. They now sit in the frig with the other jars of things that get used once and never again- like capers and chutney.
