My Italian friends always pick the Romano beans complete with pods, put them in a cardboard box and keep them somewhere dry. They stir the bean pods around each day until they are starting to be dry and the beans will fall out easily. That's when they usually like to cook them although they do dry some out completely for storage. They can also be cooked while the pods are green, but I've never had them done that way.
