Dave - I also have a 16 month old who loves to pry stuff apart. Probably the only reason that any of the computers still have keys is that the 5 year old and the 8 year old protect them. The little one has taken the balls out of the mice on more than one occasion... but both of the older kids could use a mouse to navigate before they could talk, like wise could use a TV remote. I think that you are going in the right direction by giving your infant something "useful" to do with a computer. Slightly older siblings make a big difference in how quickly that experience translates into actual use skills.

Get a new keyboard for yourself and let her use the old one, just be careful she doesn't swallow the keys.
