I usually get a charter out of Belmar. There are several at the marina, and all have been pretty good. However, I haven't gone after "the big ones" on any of those. Usually, when I want something that puts up a fight, I go to North Carolina. Hatteras or Oregon Inlet, to be precise.
From there it's a 1-2 hour trip to the Gulf Stream, where you get Marlin, shark, Sailfish, and tons of Mahi-Mahi. The MM isn't much of a fight, but it sure is good eating.

On the Jersey coast, I'm mostly fishing for fluke or weakies.
The best game fish (IMHO) that is along the Jersey/Long Island shore line is the striped bass. Good fight, and nice eating.
Downside is limitations on catch size (only 4 per day per person). But it's a great workout and when you get your 4 fish...that's some good eating.
