Lynn,
Mushrooms are raised in trays of horse manure in hot buildings with no windows. The trays are stacked in racks to conserve space. The pickers wear masks and head lamps while working in the hot dark shed.

A byproduct is mushroom soil. Great stuff for the garden after it is properly aged. Without the ageing process, it smells like horse manure.

Mushroom tip - always wash mushrooms well before eating.

Now how did you ever avoid passing a mushroom farm on Route 1 south of Longwood Gardens? You can smell one a mile away.
