You have a very liberal definition of what constitutes a "server." No doubt you considered the 430HX chipset to be a "server" chipset as well since it supported 2 processors and more than 64MB of DRAM. But no one who buys, sells, or maintains "servers" considers the i840 (or i860) to be a "server" chipset...not even Intel:

How about some companies that sell real servers, like Dell and Compaq?

Other than some glorified PCs marketed as "servers" for your mom&pop SOHO, they all use ServerWorks chipsets for their 4/8-way x86 servers.
