I don't think that Martin Luther took anything out of the Old Testament. Somewhere around the second century, the Pharisees decided to limit the Hebrew Canon to only those Books that were written before 400 B.C. and in Hebrew. Martin Luther chose this version of the Hebrew Canon as the Old Testament.
