I am not sure that Paris would be Paris without the black chamber maids, the Vietnamese caricaturists, the Turkish restaurateurs, and so forth. I stayed in a neighborhood that was predominantly Jewish and North African, quite by chance. The people who ran my hotel were probably Moroccan; more than half the restaurants for several blocks advertised that they were kosher; and yet there was still a bistro filled with working class ethnic French a block away, and everything seemed, well, normal........
