I used to make a lot of sausage. I bought and butchered a hog. 370 pound Hampshire. Cold smoked the bacon and sausage, also some big salmon filets. I made salami out of a lot of things. Deer, goose, jack rabbit. I made some salami out of turkey and took it fishing. We were eating it and my cousin asked what it was made from. I told him foundered foals. The guide started puking.
