You haven't traveled in the South have you :-)
Take white corn and grind it up (or better yet, go to the grocery store and buy it). Add boiling water, stir to the consistency you like, add butter and a little salt. Just like cream of wheat if you're a yankee, but better. Southerners love it with eggs (over easy) in the AM. My Mother always made them when we had fried fish for dinner too. Was surprised to find them in the grocery store here in WA State. I'm taking 3 big boxes with me this summer when I head up to BC and the Yukon!!
I'm going to try to find some of those places you mentioned in Alberta
