>I am trying to find the word(s) to describe what I saw as the referee stroked the Korean's coach in the cheek, and the coach offering water to him ? (this after the coach had been throwing a temper tantrum and throwing his coat to the ground) ?

I think the ref and Hiddinck handled it wonderfully actually. The ref went and talked to him and told him "what is ze problem coach, looks like u are having a heart attack, I am worried about you" and Coach said "Oh, get out of here you rascal, here I see you are sweating, you wanna have some cool Korean water" and ref said "No, thank you it may have some dog pee in it, but I appreciate your offer, now, please get back to coaching and I am gonna get back to refing and since I like you so much I am honored to give you a warning, next time you lose your coat you may go find it in the stands where our fourth official will have the honor to escort you, now let's play ball, shall we?

Handling such matters with humor has a calming influence in the nerves in a hotly contested match, besides if he had thrown him out imagine how many Korean women would have commited suicide!!

I thought it was a very funny and laid back moment in a very difficult game, how many times do you see that? As far as managing the game, from the ref's perspective, I thought it was a brilliant move
