Joan, I read an article in Esquire many moons ago about a working ranch. The author noted that they ate bacon and scrambled eggs for breakfast every morning. Steaks for dinner. And what shocked him was when he looked at the picture and noted how lean they all were. He credited it to the amount of physical work they did, which is certainly true. But the low carbohydrate content of their diet, at least as a % of calories consumed, may have had something to do with it.
