Good morning E,

Your chicken recipe sounds wonderful. It's probably the original version of mine, which has been bastardized over the years. I've been known to put an apple in when they're in season, or sweet potatoes. I also vary the herbs: sometimes fresh thyme or rosemary, sometimes herbs de Provence. And you can substitute chicken broth for wine, which works fine. I'll have to try olives. I love them. Prunes and dried apricots might also be great in the fall and winter.

Unfortunately I have no recipe for biscuits that uses anything but a pantload of sweet butter. Have you ever tried pappadums? They're made with lentils instead of flour and are cooked by flash frying in oil. You can buy them plain or (my preference) with black pepper in them. They might be a good low-cholesterol starch.

And your Syrian friend's chicken recipe sounds incredible. I sometimes marinate boned breasts all day in fresh lemon juice, then grill them. They're very flavorful and low fat.
