How about a Grande Marnier souffle. mmmm yummm, I recall the Buena Vista in CA had a wonderful one, and Ondine's in Sausalito years ago. You have to be very careful with those things otherwise they deflate like our economy under Bush.

Preheat the oven, dust the sides of the dish with flower, and never, ever allow any noises or vibrations. Adding an extra egg white also helps. A pinch of cream of tartar in the egg whites will also stiffen them a bit.
