I would not eat pork prepared by anyone other than myself. The risk is only 1% if they did not cook it to 160 degrees internally for 15 minutes but it is a risk that is more than I would ordinarily take.

FWIW, I've read a number of sources lately saying that trichinosis has become a non-issue in our part of the world. I quit concerning myself about it. I don't recall the sources, but they were sources I considered reliable when I read them. Here's something I just googled.

You're obviously more cautious than I. I've been eating raw meat and seafood all my life. I'm not suggesting that you be less cautious. Just pointing out that your concerns about pork may be out of date.
