Gee Murrey.... I thought I explained it in the post? Doh!

The cows that are sold to the middleman by the ranchers are non fat cows. The ranchers don't fatten up the cows. You could call the middleman the feed yards, or stock yards. They are the wholesalers of beef. They fatten up the cows after purchase. Then they do the killing and rough butchering of the cow for sale to the retail market. The middlemen have a stronghold on the beef market. They also are the ones making money...the lions share of the money in beef. The ranchers are hurting. e-business would help out the ranchers a bunch.
