I ended up getting pizza from the best Italian restaurant I know of. I had no idea what their pizza cost, and ended up spending almost $50 on two large Sicilian deepdish "meatlovers" pizzas (with ample leftovers). They were, indeed, wonderful pizzas, but whether they were worth about $25 is a question.

When I had blinis with caviar at the Russian Tea Room one Christmas season a few years ago, I was faced with this question: did I believe the Beluga caviar was worth $40 more for five ounces than Sevruga? ($25 as opposed to $65, blinis thrown in, and served for two). As it happened, I had no faith that it was worth that much more, though if I were rich, I would have played it safe and gotten the Beluga.

Actually, though, it is generally wrong to look at the price in quite that way. It is usually less a question of the premium level being a rip off, than of the lower levels being heavily discounted. In other words, if a really good auslese is about $30, and a really good spatelese is about $15, the spatelese is not half as good, but perhaps 3/4s as good, so you are getting a price break on the spatelese! If the true "quality ratio" were reflected in the price, given the relatively small dollar difference ($30 : $22.50), a lot of people would thrown in the extra $7.50 and buy the auslese. Pricing the spatlese at $15 makes it worth buying.

In the sense, of course, it was a fair bet that the Sevruga was a bargain......
