Yep, 320 kbit or variable bit rate files sounds pretty good. Unless you're using a modem, the size differential is not a big deal.

As for "high-end" features like 5.1 or DTS, 4 or 5 channel audio has always lacked in market penetration for music alone. If movie distribution goes online and provides an alternative to DVDs then the 5 channel sound would ride along, but there are too many music applications like auto sound or headsets that just don't require it.

I've owned a few multi-channel audio systems since the early 70s, and I'm still not sold on the value added.
