I've never had pot roast with celery.
my mom always made it with carrots, potatoes, and onions. And that was it. Then New England boiled dinner was also something my mom fixed all the time- and that had carrots, potatoes, onions and cabbage. I can't remember celery making many appearances on our table when I was growing up.
