Wild goose is one thing you don't want to overcook. It has the same meat/fat ratio as beef tenderloin. When I get a flock of them flying over my pasture on a regular basis I get tempted but the thought of hand plucking one ...

I knew a guy who raised tame ducks. He slaughtered them at 6 weeks as after that they would just add fat. Even at that age they still would drip a pint of grease each.
