Because he was an old man driving around taking orders. That took some time. Then he had to figure How many pounds of dead pig he'd need. After that he'd visit several swine producers and order his hogs and set the delivery dates. That rolled it into November and cooler weather. Much better temperatures for hanging carcasses and smoking them.

I did a hog once with a friend. Asked for a small one and got a 376 pound Hampshire. Several old farmers asked if we had a scalding pot and scrapers and when I said no, we'd skin it, they laughed. You can't skin a hog with a good sharp knife. OTOH I knew that a cheap knife sharpened with a file would slice through lard like it was butter.

Cost of everything including the bullet, spices and wrapping paper was 66 cents a pound. That didn't include the lard and the yummy pork rind we ate while rendering the lard.
