You used to be able to joke about shiftless lazy people of certain ethnic origins. Times change. It's probably better (imo) to joke about things that don't mock the heritage or race of others. You never know who you're bothering until it's too late- and sometimes you never know, because people don't tell you. There's lots of material for jokes out there, I'm not sure we need to keep the ethnic litany.
