The ingredients, wok, fire must be just right. This is obviously true because I have tried everything, all the "right" ingredients in all sorts of combinations. Yet, my Chinese dishes just do not quite make it. I had a good C-friend chef, but missed the opportunity as he moved to NC. What a missed opportunity. I'd love to spend a few weeks working for some guy in exchange for knowledge. Unfortunately don't have that sort of time. Were I younger, or much older, that would perhaps be just the thing to do.
