Evil does exist and is not a simplistic, childish concept. I don't think your opinion on this is sophisticated. While most people have tendencies to both good and evil, they are not all equal in virtue (another concept you likely have consider childish). Saddam is clearly one of the most wholly evil people we know of. It is relevant when considering his claims versus someone like Colin Powell or Bush.

In comparing Saddam to Pinochet, and not excusing Pinochet for the murder of thousands, Saddam is another league all together. While Pinochet may be responsible for the deaths of thousands, Saddam is responsible for the deaths of over a million. Moving beyond the mere counting of victims, I know the Chilean government was involved in torturing political prisoners. But I'd be surprised if Pinochet took his children to his prisons to watch the torture. I don't expect Saddam to leave power voluntarily as Pinochet did but would like to see that. I know a number of people who have lived and some who still live in Chile and know the country is not a police state and is basically a free society.
