At least thirty million people TODAY (all of whom can afford to buy a Starbucks coffee any time they want) are served by 65 Starbucks -- that is one Starbcuks for every 400,000 potential customers. This segment of Chinese society is a) rapidly growing in numbers and b) rapidly increasing their income. The problem is not income -- the problem is they do not like coffee very much. You obviously have no idea about tea culture, or the current cost of a good pot of tea in a good tea house. Cash is still the medium of exchange and a great deal of income is not reported -- didn't they tell you that in Hong Kong? As for PPP -- it has everything to do with making estimates where income and disposable income are concerned -- what did you say you did for a living when you had a job?
