Bigos? two favs .... both EASY to fix and HARD to quit eating Bigos=== MEATS 1 lb cubed pork loin 1 cup chopped bacon 1 cup diced ham 2 lbs cubed kielbasa 2 lbs quartered small potatoes 2 cups WELL rinsed sauerkraut 1 head cabbage coarsely cut 5 med onions quartered 3 med apples quartered (cored and seeded) 1 lb mushrooms quartered 2 #303 cans diced tomatoes mix 2 tbl EACH of sugar/salt/pepper/caraway seed and 5 tbl minced garlic together and sprinkle each ingredient layer with some into a BIG pot place all ingredients in layers .. matters NOT the order ... other than the bacon, which needs to be on the slightly browned in the bottom FIRST, to curtail sticking to the pot... when the stuff is in the pot pour in half bottle of white wine *(feel free to drink the other half whilst cooking is proceeding) and enough water to cover cover ***(don't lift the lid, don't stir, don't worry) set heat on SLOW simmer for about 3 hours *(from cold start) remove from heat stir serve btw .. don't need to tell YOU, but for others .. sour cream on the side is fine CRUSTY bread is a MUST ---- that is MY bigos ---- ===================================================== and the other EASY Polish fixins ..... bring two quarts of water to a boil reduce to simmer dump in the correct amount of potato flakes *(varies according to brand, but whatever amt your brand calls for for two quarts of water) remove from heat add 1/2 cup relish 1 tbl salt 1 tbl pepper 1 tbl caraway seed 2 jiggers white vinegar 5 tbl mustard *(reg yellow mustard like goes on hot dogs) stir ****(alter the consistency to suit yourself by adding a few more flakes to make it stiff or a bit of water to make it creamier) here is what makes this one special, for me ... shred/chop half head of cabbage and add to the hot potato salad .... stir into the potato mix as this cabbage is NOT cooked, it will disappear from view, and you can't tell it is there UNTIL you bite into it .... when I serve this, it NEVER fails to elicit comments WHAT is in here WHY is it crunchy DANG it is good ...... there ... there are two of my favs .... but, I do have some more, what with me being a chef and all .... <gggg>
