People already believe that eating high carb, low fat will cause them to lose weight, so they snack on rice crackers and low carb cookies and gain weight. Now Atkins is the revelation - people really do lose weight on low carb and allowing fat into their diet. Which drives both PETA and Archer Daniels Midland, one of the biggest campaign contributers, frantic. The original USDA food pyramid was developed by lawyers working for George McGovern. McGovern thought that Americans should cut back on meat, eggs, and switch from whole milk to skim milk - low fat, high carb, so that became the official policy of the US government. For years researchers on adult onset diabetes have talked about glycemic index, avoiding white sugar and white flour, and eating foods that don't raise the insulin level. Hyperinsulinemia and insulin resistance, aka Syndrome X, is what's killing people. It causes adult onset diabetes, and heart disease. And it's caused by too many simple carbohydrates in the diet. It's not the grease on the french fries that kills you, nor the grease in the cheeseburgers, it's the bread, the potato, and the sugar in the Cokes. The Framingham has not proved any link between low fat diet and reduction in heart disease. In fact, the Framingham study showed that people who ate a lot of saturated fat weighed less and were more physically active. I am rooting for the Mediterranean diet, myself, but that's my personal preference. Olive oil, fish, vegetables. Keep the politicians out of the kitchen and the dining room. Let the parents listen to doctors and dieticians, not people in the back pocket of Archer Daniel Midlands (biggest grain grower in the US).
