Most salmon and trout are more orange than pink but when they turn white they are cooked. Oddly I cold smoked 100 pounds of salmon one year using an old curing brine. Never got over 60 degrees but still turned white. Raw and smoked and lasted on the counter 3 months. <<its only in California, Ish. In this part of the country the older folks have screwed the young. >> It's here also but the reverse, people are losing their homes because of higher taxes. One teacher per 5 students is getting nuts. Especially when the parents are forbidden to help.
